Ingredients
- Lobster tails
- Olive oil
- Unsalted butter
- Freshly minced garlic
- Lemon juice
- Dijon mustard
- Fresh parsley, chopped
- Salt & freshly cracked black pepper
- Paprika (optional)
Instructions
- Cut through the top of the lobster shell with kitchen scissors, stopping at the tail fin. Gently lift the meat from the shell, keeping it attached at the base. Brush the lobster meat with olive oil and season with salt and pepper.
- Preheat your grill to medium-high heat. Place the lobster tails meat-side down on the grill. Grill for 5–7 minutes, flipping halfway, until the meat is opaque and firm.
- Melt butter in a small saucepan over low heat. Stir in minced garlic, lemon juice, Dijon mustard, and chopped parsley. Simmer for 1–2 minutes to blend flavors.
- Spoon the warm herb butter sauce over the cooked lobster meat. Garnish with fresh parsley and serve immediately with lemon wedges.
