Description
Quick and delicious cornbread that is crunchy on the outside and soft and fluffy inside.
Ingredients
- 2/3 cup cornmeal
- 1/3 cup self-rising flour
- 1/3 cup low-fat buttermilk
- 1 large egg
- Oil for frying
Instructions
- In a bowl, mix the cornmeal, self-rising flour, buttermilk, and egg together until the batter is sticky and well combined.
- Heat a generous amount of oil in a skillet over medium-high heat until it is nice and hot.
- Carefully drop spoonfuls of the batter into the hot oil, treating them like little pancakes.
- Fry until each side is golden brown, flipping them carefully. Place them on paper towels to drain any excess oil and serve warm.
