Description

Ingredients

  • 2/3 cup cornmeal
  • 1/3 cup self-rising flour
  • 1/3 cup low-fat buttermilk
  • 1 large egg
  • Oil for frying


Instructions

  1. In a bowl, mix the cornmeal, self-rising flour, buttermilk, and egg together until the batter is sticky and well combined.
  2. Heat a generous amount of oil in a skillet over medium-high heat until it is nice and hot.
  3. Carefully drop spoonfuls of the batter into the hot oil, treating them like little pancakes.
  4. Fry until each side is golden brown, flipping them carefully. Place them on paper towels to drain any excess oil and serve warm.
