Description
Crispy air fryer zucchini bites with parmesan and herbs. A quick and flavorful side dish ready in 20 minutes.
Ingredients
- 1 pound zucchini (about 2 medium)
- 2 tablespoons olive oil
- 2 tablespoons finely grated parmesan cheese
- 2 tablespoons panko breadcrumbs
- 1 half teaspoon dried basil
- 1 quarter teaspoon dried oregano
- 1 quarter teaspoon kosher salt
- 1 quarter teaspoon black pepper
Instructions
- Wash and dry the zucchini. Trim the ends and cut into three quarter inch cubes.
- In a medium bowl, combine the zucchini, olive oil, parmesan cheese, panko breadcrumbs, dried basil, dried oregano, salt, and black pepper. Toss until evenly coated.
- Preheat the air fryer to 400 degrees Fahrenheit for 3 minutes.
- Spread the zucchini in a single layer in the air fryer basket. Do not overcrowd. Cook in batches if needed for best crispness.
- Air fry at 400 degrees Fahrenheit for 6 to 8 minutes, shaking the basket halfway through, until the zucchini is tender and lightly golden on the edges.
- Remove from the air fryer and serve immediately while hot and crisp.

- Cooking in a single layer ensures the zucchini roasts instead of steaming for the best texture.
