Description

Crispy air-fryer ham and cheese egg rolls ready in 15 minutes. These are easy, kid-friendly, and perfect for a fast breakfast or snack with gooey centers and golden shells.


Ingredients

  • 10 egg roll wrappers
  • 6 large eggs
  • 2 tablespoons milk
  • 1 cup shredded cheddar cheese
  • 8 ounces diced cooked turkey ham
  • 1 tablespoon butter
  • 1 teaspoon salt
  • Cooking oil spray
  • Dipping sauce ingredients: 2 tablespoons Dijon mustard, 2 tablespoons mayonnaise, 1 teaspoon honey


Instructions

  1. Beat eggs with milk and salt until well combined.
  2. Melt butter in a nonstick skillet over medium heat. Scramble the eggs until just set and still glossy. Remove from heat.
  3. Stir cheddar cheese and diced turkey ham into the warm eggs. Mix to distribute the filling evenly.
  4. Place one wrapper diamond-side up. Put about 3 to 4 tablespoons of filling in a log across the lower third. Fold the bottom over, fold the sides in, then roll tightly. Seal the tip with a dab of water. Repeat for all wrappers.
  5. Lightly spritz all sides of the rolls with oil spray. Lightly spritz the air-fryer basket. Arrange rolls in a single layer with space between them.
  6. Air fry at 390°F for 7 minutes, flipping halfway, until golden and crisp. Add 1 to 2 minutes if you want a deeper color.
  7. Whisk Dijon mustard, mayonnaise, and honey together for dipping while the rolls cook.
  8. For food safety, if you add chicken variations, make sure the internal temperature reaches 165°F (74°C).

Notes

  • Slightly undercook the scrambled eggs so they stay tender after air frying.
  • Do not overfill; 3 to 4 tablespoons per wrapper prevents the rolls from bursting or getting soggy spots.
  • Preheat your air fryer if your model suggests it. Avoid crowding the basket for even browning.
  • Seal the final corner with water and press firmly to stop filling from leaking.
  • Refrigerate leftovers in an airtight container for up to 3 days. Re-crisp them in the air fryer at 350°F for 3 to 5 minutes.
  • Freeze the rolls on a tray until solid, then store for up to 2 months. Air fry from frozen at 360°F for 10 to 12 minutes, flipping once.
