Ingredients
- 2 slices white or wholegrain sandwich bread
- 2 large eggs
- 6 tablespoons shredded mozzarella cheese
- 2 teaspoons olive oil
- Pinch salt and pepper
- Sesame seeds for topping, optional
- Hot sauce or syrup for serving, optional
Instructions
- Place bread slices in the air fryer basket in a single layer. Press the center of each slice with the back of a spoon to make a shallow well.
- Brush the surface and edges of each slice with olive oil so the toast crisps evenly.
- Crack one egg into each well carefully so the white stays contained. Season with a pinch of salt and pepper.
- Sprinkle 3 tablespoons mozzarella over each slice, letting some fall on the edges for crispy cheese bits.
- Air fry at 350°F for 7 minutes for a runny yolk; cook up to 10 minutes for a more set yolk. Start checking at 5 minutes since air fryers vary.
- The toast is done when edges are golden, cheese is melted and bubbly, whites are set, and yolk is at your preferred doneness.
- Finish with sesame seeds, and serve hot with a few dashes of hot sauce or a drizzle of syrup if you like.
- For food safety, cook eggs and any added chicken or meats to an internal temperature of 165°F 74°C.

- Press a deep enough well so the egg sits neatly and does not run off the bread.
