Ingredients
- 1 pound boneless skinless chicken thighs cut into strips
- 1/3 cup plain Greek yogurt
- Zest and juice of 1 lemon
- 3 cloves garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 ripe avocado mashed
- 1/3 cup plain Greek yogurt
- 1/2 English cucumber grated and moisture squeezed out
- 1 tablespoon red wine vinegar
- Juice of 1/2 lemon
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped dill or mint
- 14 ounces russet potatoes cut into fries
- 1 teaspoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried mixed herbs
- 4 pita breads
- 1 tomato thinly sliced
- 1/2 red onion thinly sliced
- 1/2 avocado sliced
Instructions
- Mix yogurt, lemon zest, lemon juice, garlic, salt, pepper, paprika, oregano, and thyme in a bowl. Add chicken and coat evenly. Marinate for at least 30 minutes.
- Preheat the air fryer to 392°F. Arrange chicken in a single layer and air fry for 14 to 16 minutes, flipping halfway, until browned and cooked through to an internal temperature of 165°F. Rest briefly, then slice.
- Toss potatoes with olive oil and seasonings. Air fry at 320°F for 10 minutes, then increase to 356°F and cook for another 10 minutes until crisp and golden.
- Combine mashed avocado, yogurt, cucumber, vinegar, lemon juice, garlic, salt, pepper, and herbs in a bowl until smooth and creamy to make the tzatziki.
- Warm pita breads briefly in a dry pan or microwave.
- Spread avocado tzatziki on each pita. Top with chicken, fries, tomato, onion, and avocado slices.
- Fold and serve immediately.
