Description
Juicy air fryer chicken fajitas with peppers and onions. A fast and flavorful weeknight dinner ready in 30 minutes.
Ingredients
- 2 boneless skinless chicken breasts about 8 ounces each sliced into half inch strips
- 1 red bell pepper sliced into thin strips
- 1 yellow bell pepper sliced into thin strips
- 1 green bell pepper sliced into thin strips
- 1 half large yellow onion sliced into thin strips
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 half teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1 half teaspoon black pepper
- 8 small flour tortillas
- 1 half cup sour cream
- 1 half cup guacamole
- 2 tablespoons chopped fresh cilantro
Instructions
- Stir together the chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper in a small bowl until combined.
- Add the sliced chicken, bell peppers, and onion to a large mixing bowl. Drizzle with olive oil and toss to coat.
- Sprinkle the seasoning over the mixture and toss again until everything is coated.
- Preheat the air fryer to 350 degrees Fahrenheit for 3 minutes.
- Place the chicken and vegetable mixture into the air fryer basket in an even layer. Cook in two batches if necessary.
- Air fry at 350 degrees Fahrenheit for 16 to 20 minutes, shaking the basket halfway through, until the chicken is cooked through and lightly browned.
- Verify the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Warm the tortillas briefly in a dry skillet or microwave.
- Fill tortillas with the cooked chicken and vegetables. Top with sour cream, guacamole, and chopped cilantro before serving.
