Ingredients
- 1 pound boneless skinless chicken breast, cut into 1-inch cubes
- 1 cup zucchini, cut into 1-inch half moons
- 1 cup red and yellow bell peppers, chopped into 1-inch pieces
- 1½ cups baby Bella mushrooms, quartered
- 1 cup purple onion, chopped into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon chopped fresh parsley (for serving)
- Lemon wedges (for serving)
Instructions
- Preheat the air fryer to 400°F.
- In a large bowl, combine the chicken, zucchini, peppers, mushrooms, and onion.
- Drizzle olive oil over everything and toss to coat evenly.
- In a small bowl, mix garlic powder, onion powder, Italian seasoning, chili powder, salt, and black pepper. Sprinkle over the chicken and vegetables and toss again until well coated.
- Lightly spray the air fryer basket with oil. Place half of the mixture in an even layer inside the basket.
- Air fry for 10 minutes, shaking the basket halfway through. Cook until the chicken reaches 165°F and the vegetables are tender.
- Repeat with the remaining batch.
- Transfer to a serving dish, sprinkle with fresh parsley, and serve warm with lemon wedges.
