Description

Quick air fryer chicken and vegetables ready in 15 minutes. Juicy chicken and tender veggies with bold seasoning for an easy, healthy dinner.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 1 cup zucchini, cut into 1-inch half moons
  • 1 cup red and yellow bell peppers, chopped into 1-inch pieces
  • 1½ cups baby Bella mushrooms, quartered
  • 1 cup purple onion, chopped into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (for serving)
  • Lemon wedges (for serving)


Instructions

  1. Preheat the air fryer to 400°F.
  2. In a large bowl, combine the chicken, zucchini, peppers, mushrooms, and onion.
  3. Drizzle olive oil over everything and toss to coat evenly.
  4. In a small bowl, mix garlic powder, onion powder, Italian seasoning, chili powder, salt, and black pepper. Sprinkle over the chicken and vegetables and toss again until well coated.
  5. Lightly spray the air fryer basket with oil. Place half of the mixture in an even layer inside the basket.
  6. Air fry for 10 minutes, shaking the basket halfway through. Cook until the chicken reaches 165°F and the vegetables are tender.
  7. Repeat with the remaining batch.
  8. Transfer to a serving dish, sprinkle with fresh parsley, and serve warm with lemon wedges.
