Ingredients
- 1 pound lean ground chicken
- 1 large egg
- 4 ounces shredded cheddar cheese
- 3/4 cup Panko breadcrumbs
- 1/2 cup Frank’s Buffalo Sauce
- 1/2 cup grated carrot
- 2 teaspoons ranch seasoning
Instructions
- Combine ground chicken, egg, cheddar cheese, Panko breadcrumbs, 1/2 cup buffalo sauce, grated carrot, and ranch seasoning in a mixing bowl. Mix thoroughly with a wooden spoon.
- Use a medium cookie scoop to portion the mixture into 25 meatballs. Roll each portion into a ball.
- Prepare your air fryer basket by brushing it with oil or lining it with perforated parchment paper. Arrange the meatballs in a single layer in the basket. Cook in batches if necessary.
- Cook at 400 degrees Fahrenheit for 8 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- Transfer cooked meatballs to a plate and cover with foil. Allow to rest for about 5 minutes before serving.
- Serve with extra buffalo sauce and ranch dressing, or use ranch dressing as a dip. Garnish with chives or green onions, if desired.
