Description

Crispy, high-protein cauliflower bites coated in a creamy, spicy Bang Bang sauce. Perfect for a healthy and satisfying appetizer or meal.


Ingredients

  • For the Cauliflower:
  • 1 large head of cauliflower, cut into bite-sized florets
  • 3 large eggs, beaten
  • ¾ cup almond flour
  • ¾ cup finely grated Parmesan cheese
  • 1 tbsp smoked paprika
  • ½ tsp sea salt
  • ½ tsp ground pepper
  • Cooking spray
  • For the High-Protein Bang Bang Sauce:
  • ½ cup plain Greek yogurt
  • 3 tbsp sweet chili sauce
  • 1-2 tbsp Sriracha, or to taste
  • Chopped green onions and sesame seeds for garnish (optional)


Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Set up your breading station. Place the beaten eggs in a shallow bowl. In a separate shallow bowl, combine the almond flour, Parmesan cheese, smoked paprika, salt, and pepper.
  3. Dip each cauliflower floret first into the beaten egg, allowing any excess to drip off. Then, dredge it in the almond flour mixture, pressing gently to ensure it’s fully coated.
  4. Arrange the coated cauliflower florets in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary. Lightly spray the tops of the cauliflower with cooking spray.
  5. Air fry for 12–15 minutes, shaking the basket halfway through, until the coating is golden brown and crispy and the cauliflower is tender.
  6. While the cauliflower is cooking, prepare the sauce. In a large bowl, whisk together the Greek yogurt, sweet chili sauce, and Sriracha until smooth.
  7. Once all the cauliflower is cooked, transfer the hot, crispy florets to the bowl with the bang bang sauce. Toss gently to coat all the pieces evenly.
  8. Serve immediately, garnished with chopped green onions and sesame seeds if desired.

Notes

  • For a spicier sauce, add more Sriracha.
  • If you don’t have Greek yogurt, you can use sour cream or mayonnaise, but the protein content will be lower.
  • Ensure cauliflower is dry before breading for best adhesion.
