Description
Soft and chewy blueberry oatmeal bars made with just four ingredients. These easy bars are perfect for snacks or breakfast.
Ingredients
- 1.25 cups mashed very ripe bananas
- 2.5 cups quick oats
- 2 tablespoons pure maple syrup
- 1.25 cups fresh blueberries
Instructions
- Heat oven to 350°F and line an 8-inch square baking pan with parchment paper.
- In a large bowl, mix mashed bananas, quick oats, and maple syrup until thick and evenly combined.
- Divide the oat mixture in half. Press half firmly into the bottom of the prepared pan to form an even layer.
- Add blueberries to a blender and blend until smooth and thick.
- Pour the blueberry puree evenly over the oat layer and gently spread to the edges.
- Press the remaining oat mixture into a thin square between sheets of parchment paper, then carefully place it over the blueberry layer, pressing gently to seal gaps.
- Bake for 28 to 32 minutes until the top is set and lightly golden.
- Cool completely before lifting from the pan and cutting into bars.

- Cooling fully helps the bars set cleanly for slicing.
