Description

Soft and chewy blueberry oatmeal bars made with just four ingredients. These easy bars are perfect for snacks or breakfast.


Ingredients

  • 1.25 cups mashed very ripe bananas
  • 2.5 cups quick oats
  • 2 tablespoons pure maple syrup
  • 1.25 cups fresh blueberries


Instructions

  1. Heat oven to 350°F and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix mashed bananas, quick oats, and maple syrup until thick and evenly combined.
  3. Divide the oat mixture in half. Press half firmly into the bottom of the prepared pan to form an even layer.
  4. Add blueberries to a blender and blend until smooth and thick.
  5. Pour the blueberry puree evenly over the oat layer and gently spread to the edges.
  6. Press the remaining oat mixture into a thin square between sheets of parchment paper, then carefully place it over the blueberry layer, pressing gently to seal gaps.
  7. Bake for 28 to 32 minutes until the top is set and lightly golden.
  8. Cool completely before lifting from the pan and cutting into bars.
