Description

A quick and flavorful dinner featuring juicy chicken breasts topped with creamy feta and garlic spinach. This high-protein meal is perfect for busy weeknights.


Ingredients

  • 4 boneless skinless chicken breasts (about 5 ounces each, 3/4 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 2 cups fresh baby spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice


Instructions

  1. Preheat your oven to 425 degrees F. Lightly brush a baking dish with olive oil.
  2. Pat the chicken breasts dry and place them in the baking dish. Drizzle with olive oil and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and dried oregano.
  3. In a skillet over medium heat, add a small drizzle of olive oil if needed. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add chopped spinach and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for 1 to 2 minutes until just wilted. Remove from heat.
  5. In a small bowl, stir together feta cheese, Greek yogurt, and lemon juice. Fold in the wilted spinach mixture.
  6. Spoon the spinach and feta mixture evenly over each chicken breast, spreading gently to cover the tops.
  7. Bake for 15 to 18 minutes until the chicken reaches an internal temperature of 165 degrees F and the topping is lightly golden at the edges.
  8. Let rest for 5 minutes before serving.
