  • 2 cups heavy cream

  • 12 oz fettuccine pasta

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and sprinkle with Cajun seasoning. Cook for 5-7 minutes until golden brown and fully cooked. Remove chicken and set aside.
  2. In the same pot, add minced garlic and diced bell pepper. Sauté for 2-3 minutes until fragrant. Stir in halved cherry tomatoes and cook for another 2 minutes.
  3. Pour in heavy cream and chicken broth, stirring well. Bring to a gentle simmer.
  4. Add fettuccine pasta, ensuring it is submerged in the sauce. Cook according to package instructions (about 10-12 minutes), stirring occasionally.
  5. Once pasta is cooked, stir in the cooked chicken, grated Parmesan cheese, and fresh spinach. Mix until cheese melts and spinach wilts. Season with salt and pepper to taste. Garnish with fresh parsley and red pepper flakes if desired.
