Ingredients
- 1 cup jasmine or long-grain white rice
- 2 cups low-sodium chicken broth
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1 pound ground beef or ground turkey
- 2 tablespoons olive oil
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded romaine or iceberg lettuce
- 1 cup diced tomato
- 1 avocado, sliced
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1/4 cup salsa or pico de gallo
- 1 lime, cut into wedges
- Fresh cilantro, chopped
Instructions
- Rinse the rice until the water runs clear. Combine rice, broth, olive oil, and salt in a saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 18 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
- Heat olive oil in a skillet over medium-high heat. Add onion and cook for 2 minutes until softened. Add garlic and cook 30 seconds more.
- Add ground beef or turkey. Cook until browned, breaking up with a spoon, about 6–8 minutes. Drain any excess fat.
- Stir in tomato paste, chili powder, cumin, paprika, oregano, salt, pepper, and water. Simmer 2–3 minutes until the mixture thickens slightly.
- In a small pan over medium heat, warm black beans and corn together with a splash of water until heated through.
- Spoon rice into each serving bowl. Top with taco beef, beans, and corn.
- Layer with lettuce, tomato, avocado, cheese, and a spoonful of salsa.
- Squeeze fresh lime over each bowl and sprinkle with cilantro before serving.
Notes
- For meal prep, store ingredients separately and assemble just before serving to keep the toppings fresh.
