Description
A warm and hearty sweet potato beef bowl topped with cottage cheese, avocado, and hot honey. It balances sweet, spicy, and savory flavors.
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 cup cottage cheese
- ¼ cup honey
- ⅛ teaspoon cayenne pepper or ¼ teaspoon chili flakes
- 1 ripe avocado, sliced
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread them in a single layer and roast for 25 minutes, tossing halfway through, until golden and tender.
- Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until softened. Add garlic and cook 1 minute more.
- Add ground beef, season lightly with salt and pepper, and cook for 6–8 minutes, breaking it apart until browned and fully cooked. Drain excess fat if needed.
- In a small bowl, mix honey with cayenne or chili flakes. Adjust spice to taste.
- Divide roasted sweet potatoes into bowls. Top with the cooked beef, a scoop of cottage cheese, sliced avocado, and drizzle generously with hot honey.
- Sprinkle with extra chili flakes or chopped parsley for color if you wish.

- For a lighter version, swap beef for ground turkey or lentils.
