Description

A warm and hearty sweet potato beef bowl topped with cottage cheese, avocado, and hot honey. It balances sweet, spicy, and savory flavors.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cup cottage cheese
  • ¼ cup honey
  • ⅛ teaspoon cayenne pepper or ¼ teaspoon chili flakes
  • 1 ripe avocado, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread them in a single layer and roast for 25 minutes, tossing halfway through, until golden and tender.
  3. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until softened. Add garlic and cook 1 minute more.
  4. Add ground beef, season lightly with salt and pepper, and cook for 6–8 minutes, breaking it apart until browned and fully cooked. Drain excess fat if needed.
  5. In a small bowl, mix honey with cayenne or chili flakes. Adjust spice to taste.
  6. Divide roasted sweet potatoes into bowls. Top with the cooked beef, a scoop of cottage cheese, sliced avocado, and drizzle generously with hot honey.
  7. Sprinkle with extra chili flakes or chopped parsley for color if you wish.
