Southern-Style Honey Butter Cornbread Poppers are delightful mini treats that combine the classic flavors of cornbread with a sweet twist. These poppers are soft, fluffy, and bursting with sweet corn and cheddar cheese, drizzled with honey butter for a rich finish.

Ingredients

  • Cornmeal: 1 cup
  • All-Purpose Flour: 1 cup
  • Granulated Sugar: 1/4 cup
  • Baking Powder: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Buttermilk: 1 cup
  • Eggs: 2 large
  • Unsalted Butter: 1/4 cup melted, plus 1/4 cup softened for topping
  • Sweet Corn Kernels: 1 cup
  • Shredded Cheddar Cheese: 1 cup
  • Honey: 1/4 cup
  • Fresh Chives or Parsley: Optional, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your muffin tin.
  2. In a large mixing bowl, combine the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the sweet corn kernels and shredded cheddar cheese.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
  8. Prepare the honey butter by mixing softened butter and honey until creamy.
  9. Let the poppers cool slightly, then drizzle with honey butter and garnish with fresh chives or parsley if desired.

Notes

  • Use fresh ingredients for the best flavor.
  • Check your baking powder for freshness.
  • Don’t overmix the batter to keep the poppers light and fluffy.
