Description

Ingredients

  • 4 boneless, skinless chicken breasts, about 6 ounces each
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • 1 teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, chopped
  • Steamed vegetables or cooked rice (to serve)


Instructions

  1. Preheat oven to 375°F.
  2. Pat chicken dry with paper towels and season both sides with salt, pepper, and paprika.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add chicken and sear for about 5 minutes per side until golden brown.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Pour in chicken broth and bring to a gentle simmer, scraping any browned bits from the pan.
  7. Stir in sour cream until the sauce becomes creamy and smooth. Let it bubble gently for 3 to 4 minutes.
  8. Sprinkle shredded Jack cheese evenly over the chicken breasts.
  9. Transfer the skillet to the oven and bake for 12 to 15 minutes, until the cheese is melted and the chicken reaches 165°F internally.
  10. Remove from oven, top with chopped green onions, and let rest for 3 minutes before serving.
