Description
Tender, flavorful slow cooker teriyaki chicken made with a honey garlic glaze. This is a simple, no-fuss dinner perfect for meal prep or weeknights.
Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- ⅓ cup low-sodium soy sauce
- ⅓ cup water
- 2 tablespoons light brown sugar
- 2 tablespoons honey
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 teaspoon sesame oil
- 2 teaspoons minced garlic
- ½ teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons cold water (for slurry)
- Cooked jasmine rice (to serve)
- Sliced green onions (for topping)
- Sesame seeds (for topping)
Instructions
- Place chicken pieces in the bottom of a 6-quart slow cooker.
- Whisk soy sauce, water, brown sugar, honey, vinegar, sesame oil, garlic, and ginger in a medium bowl until mixed.
- Pour the sauce mixture over the chicken. Stir gently to coat the chicken pieces.
- Cover the slow cooker. Cook on LOW for 5 hours or on HIGH for 2½ to 3 hours, until the chicken reaches 165°F and is tender.
- Remove the lid. Transfer about ¼ cup of the cooking liquid to a small bowl. Whisk in cornstarch and cold water until the mixture is smooth.
- Pour the cornstarch slurry back into the slow cooker. Stir. Cook uncovered for 10 to 15 minutes until the sauce thickens.
- Serve the chicken warm over rice. Top with green onions and sesame seeds.
Notes
- Stir in broccoli florets or snap peas during the last 30 minutes of cooking for added vegetables.
