Description

A fruity twist on the classic tiramisu. This no-bake dessert layers mascarpone cream, homemade raspberry jam, and syrup-soaked ladyfingers for an elegant finish.


Ingredients

  • For the Raspberry Jam: 3 cups frozen raspberries
  • ½ cup granulated sugar (for jam)
  • 1 tablespoon fresh lemon juice (for jam)
  • For the Raspberry Syrup: ½ cup granulated sugar (for syrup)
  • ½ cup water
  • ¼ cup frozen raspberries (for syrup)
  • For the Mascarpone Cream: 16 ounces mascarpone cheese, cold
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for cream)
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, cold
  • For Assembly: 25 to 30 ladyfinger cookies
  • Fresh raspberries for garnish
  • Lemon zest or thin lemon slices for decoration


Instructions

  1. Make the Raspberry Jam: Combine raspberries, sugar, and lemon juice in a saucepan. Cook over medium heat until bubbling. Reduce heat and simmer 20–25 minutes until thickened. Refrigerate until cool.
  2. Prepare the Raspberry Syrup: Combine sugar, water, and raspberries in a small saucepan. Boil, then simmer for 3 minutes, mashing berries slightly. Strain to remove seeds and cool completely.
  3. Make the Mascarpone Cream: Beat mascarpone, powdered sugar, lemon juice, and vanilla until smooth. Add cold heavy cream and whip until medium-stiff peaks form. Do not overmix.
  4. Assemble the Tiramisu: Spread a thin layer of mascarpone cream in an 8×10-inch or 9×9-inch dish.
  5. Quickly dip each ladyfinger into the raspberry syrup (1–2 seconds per side) and arrange in a single layer over the cream.
  6. Spread half the mascarpone cream evenly over the ladyfingers, followed by half the raspberry jam.
  7. Repeat with another layer of dipped ladyfingers and the remaining cream.
  8. Chill: Cover with plastic wrap and refrigerate at least 8 hours or overnight.
  9. Finish & Serve: Spread the remaining raspberry jam on top. Garnish with fresh raspberries and lemon zest. Slice and serve chilled.
