Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- Pour half of the red velvet batter into the prepared baking pan and bake for about 15 minutes.
- While the first layer is baking, prepare the cheesecake layer by beating cream cheese, powdered sugar, and vanilla extract until smooth.
- Once the first layer is done, spread the cheesecake mixture evenly over it, then pour the remaining red velvet batter on top and swirl gently.
- Bake for an additional 25-30 minutes until a toothpick comes out clean.
- Let the bars cool completely in the pan before slicing and serving with whipped cream, raspberries, and mint leaves.
