Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Wash and scrub the russet potatoes thoroughly, then slice them very thinly (about 1/8 inch thick).
  3. Soak the potato slices in a bowl of cold water for about 30 minutes.
  4. Drain the potato slices and pat them dry with a clean kitchen towel.
  5. Toss the dried potato slices with olive oil, sea salt, garlic powder, onion powder, smoked paprika, and black pepper in a large bowl.
  6. Arrange the potato slices in a single layer on the prepared baking sheets.
  7. Bake for 20-25 minutes, flipping the chips halfway through the baking time.
  8. Remove from the oven, let cool for a few minutes, and garnish with fresh herbs if desired.
