Description
This peanut butter cake is rich, moist, and layered with creamy peanut butter frosting. It is an easy peanut butter cake perfect for celebrations.
Ingredients
- Peanut Butter Cake:
- 2¼ cups all purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon kosher salt
- ¾ cup unsalted butter softened
- 1¾ cups granulated sugar
- ¾ cup creamy peanut butter
- 4 large eggs room temperature
- 1 cup whole milk
- 1 teaspoon vanilla extract
- Peanut Butter Frosting:
- 1 cup unsalted butter softened
- 1½ cups creamy peanut butter
- 4 cups powdered sugar
- 4 to 6 tablespoons whole milk
- Garnish:
- Peanut butter sandwich cookies halved
Instructions
- Preheat the oven to 350°F. Grease two 9 inch round cake pans. Line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar for 3 minutes until light and fluffy.
- Beat in the peanut butter until fully incorporated.
- Add the eggs one at a time. Mix well after each addition. Mix in the vanilla extract.
- Add the dry ingredients alternately with the milk. Begin and end with the dry ingredients. Mix just until smooth.
- Divide the batter evenly between the prepared pans. Smooth the tops.
- Bake for 28 to 32 minutes. A toothpick inserted in the center must come out clean. Cool in pans 10 minutes. Turn out onto racks to cool completely.
- For the frosting, beat the butter and peanut butter together until creamy. Gradually add the powdered sugar and beat until smooth. Add milk a tablespoon at a time until spreadable.
- Place one cake layer on a serving plate. Frost the top. Add the second layer. Frost the top and sides. Garnish with cookie halves before serving.
