- 1 lb ground turkey (or your favorite halal ground meat)
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 stalk celery, diced
- 1 cup sweet corn (frozen or fresh)
- 4 cups vegetable broth
- 2 cups elbow macaroni (or your favorite pasta)
- 1 1/2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups whole milk
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp mustard powder
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro
Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned.
- Add the diced red onion, minced garlic, carrot, and celery. Sauté for 4-5 minutes.
- Pour in the vegetable broth and bring to a boil. Add the elbow macaroni and reduce heat to a simmer. Cook for 8-10 minutes.
- In a small bowl, whisk together the whole milk, heavy cream, and flour until smooth. Slowly pour into the pot while stirring.
- Stir in the shredded cheddar and mozzarella cheeses, smoked paprika, mustard powder, salt, and pepper until melted.
- Ladle the soup into bowls and garnish with fresh cilantro before serving.
