Ingredients

  • 1 lb ground turkey (or your favorite halal ground meat)
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 stalk celery, diced
  • 1 cup sweet corn (frozen or fresh)
  • 4 cups vegetable broth
  • 2 cups elbow macaroni (or your favorite pasta)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp mustard powder
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned.
  2. Add the diced red onion, minced garlic, carrot, and celery. Sauté for 4-5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Add the elbow macaroni and reduce heat to a simmer. Cook for 8-10 minutes.
  4. In a small bowl, whisk together the whole milk, heavy cream, and flour until smooth. Slowly pour into the pot while stirring.
  5. Stir in the shredded cheddar and mozzarella cheeses, smoked paprika, mustard powder, salt, and pepper until melted.
  6. Ladle the soup into bowls and garnish with fresh cilantro before serving.
