Description

A delightful twist on the classic custard pie, featuring creamy custard enriched with shredded coconut and topped with fresh fruits.

Ingredients

Scale
  • 1 pre-made pie crust
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup fresh blueberries (optional)
  • 1/2 cup sliced strawberries (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and sugar until well combined and slightly frothy. Add the milk, vanilla extract, nutmeg, cinnamon, and salt, mixing until smooth.
  3. Stir in the shredded coconut into the egg mixture.
  4. Pour the custard mixture into the pre-made pie crust, filling it about 3/4 full.
  5. Bake for 45-50 minutes, or until the custard is set and golden on top.
  6. Let the pie cool to room temperature.
  7. Top the cooled pie with fresh blueberries and sliced strawberries.
  8. Garnish with fresh mint leaves and serve.

Notes

  • Use room temperature ingredients for a smoother custard.
  • Don’t overmix the custard mixture.
  • Check for doneness by inserting a toothpick into the center.
  • Let the pie cool completely before slicing.
  • Store leftovers in the refrigerator for up to 3-4 days.
