Ingredients

  • 8 ounces mozzarella or feta cheese, cut into ¾-inch cubes
  • 4 ounces turkey salami, sliced into thin strips
  • 1 cup green olives, pitted and halved
  • ½ cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Crackers or toasted baguette slices for serving
  • Fresh rosemary or thyme sprigs for garnish


Instructions

  1. Cut the cheese into cubes and the turkey salami into thin strips. Slice or halve the olives if you prefer.
  2. Whisk together olive oil, vinegar, garlic, oregano, basil, red pepper flakes, salt, and black pepper in a medium bowl until combined.
  3. Layer cheese cubes, salami strips, and olives evenly in a glass jar or airtight container.
  4. Pour the marinade over the mixture, making sure all pieces coat and submerge.
  5. Seal the jar tightly and refrigerate for a minimum of 4 hours or overnight.
  6. Let the marinated cheese sit at room temperature for 20 minutes before serving. Serve with crackers or toasted bread and garnish with rosemary or thyme.
