  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked macaroni or pasta of your choice
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Sliced jalapeños (optional, for a spicy kick)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef or turkey in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess fat.
  3. Sauté the diced onion, minced garlic, and diced bell pepper in the skillet for about 5 minutes until tender.
  4. Stir in corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. In a large mixing bowl, combine cooked macaroni with the meat and vegetable mixture. Add sour cream and half of the shredded cheeses. Mix well and transfer to a greased 9×13 inch baking dish.
  6. Top with remaining cheese and bake for 25-30 minutes until bubbly and golden brown.
  7. Let cool for a few minutes, garnish with cilantro and jalapeños, and serve warm.
