Description

A delicious and creamy Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake that combines ground beef, rotini pasta, and a cheesy ranch sauce for a comforting meal.

  • 2 cups rotini pasta, cooked and drained
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Ground Beef: Grab a large skillet and heat that olive oil over medium heat. Toss in the ground beef and cook it up until it’s nice and browned, breaking it apart as it cooks. Drain any excess fat, then sprinkle in the garlic powder, onion powder, salt, and pepper. Stir in that ranch seasoning mix and set it aside for now.
  2. Prepare the Sauce: In a separate saucepan, combine the cream cheese, sour cream, and milk over medium heat. Stir it up until the cream cheese is fully melted and everything’s nice and smooth. Then, add in the shredded cheddar cheese and keep stirring until it’s all melted and creamy. Give it a taste and season with a pinch of salt and pepper if needed.
  3. Assemble the Bake: Preheat your oven to 375°F (190°C). In a big mixing bowl, combine the cooked rotini pasta, that delicious beef mixture, sweet corn, and your cheesy sauce. Stir it all together until everything’s well mixed.
  4. Bake the Dish: Transfer that glorious mixture into a greased 9×13-inch baking dish. Spread it out evenly and sprinkle a little extra shredded cheddar cheese on top for that extra cheesy goodness we all love.
