Description
These buttery lemon crumb bars feature a zesty lemon filling sandwiched between layers of golden oat crumble. They are easy to make and perfect for any spring event.
Ingredients
- 1¼ cups all-purpose flour
- 1¼ cups old-fashioned rolled oats
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- ¾ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons finely grated lemon zest
- ½ cup fresh lemon juice
- 2 large egg yolks
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F. Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk flour, oats, baking soda, salt, granulated sugar, and brown sugar until combined.
- Stir in melted butter and vanilla extract to form coarse crumbs.
- Press half of the crumb mixture firmly into the prepared pan bottom.
- Bake the base for 15 minutes until lightly golden.
- In a separate bowl, whisk sweetened condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
- Pour the lemon filling evenly over the baked crust.
- Sprinkle the remaining crumb mixture on top, pressing lightly.
- Return the pan to the oven and bake for 20 to 22 minutes until the top is golden and edges are set.
- Allow the bars to cool completely at room temperature.
- Refrigerate for at least 1 hour to firm up before cutting.
- Cut into bars and dust with powdered sugar before serving.
