Description

These buttery lemon crumb bars feature a zesty lemon filling sandwiched between layers of golden oat crumble. They are easy to make and perfect for any spring event.


Ingredients

  • 1¼ cups all-purpose flour
  • 1¼ cups old-fashioned rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons finely grated lemon zest
  • ½ cup fresh lemon juice
  • 2 large egg yolks
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat your oven to 350°F. Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk flour, oats, baking soda, salt, granulated sugar, and brown sugar until combined.
  3. Stir in melted butter and vanilla extract to form coarse crumbs.
  4. Press half of the crumb mixture firmly into the prepared pan bottom.
  5. Bake the base for 15 minutes until lightly golden.
  6. In a separate bowl, whisk sweetened condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
  7. Pour the lemon filling evenly over the baked crust.
  8. Sprinkle the remaining crumb mixture on top, pressing lightly.
  9. Return the pan to the oven and bake for 20 to 22 minutes until the top is golden and edges are set.
  10. Allow the bars to cool completely at room temperature.
  11. Refrigerate for at least 1 hour to firm up before cutting.
  12. Cut into bars and dust with powdered sugar before serving.
