- ½ teaspoon Baking soda
- 1 teaspoon Salt
- 1 cup Unsalted butter, softened
- 1 ¾ cups Granulated sugar
- 4 large Eggs
- 1 cup Buttermilk
- 1 teaspoon Vanilla extract
- 1 cup Fresh mixed berries
- Optional: Almond extract, Zest of lemon or orange, Chopped nuts, Edible flowers
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
- Cream the softened butter and sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Gradually combine the dry ingredients with the butter mixture, alternating with buttermilk.
- Gently fold in the fresh mixed berries.
- Divide the batter between the prepared pans and bake for 25-30 minutes.
- While the cakes cool, whip together the heavy cream, powdered sugar, and vanilla extract for the frosting.
- Assemble the cake by layering the cakes with frosting in between and covering the top and sides with the remaining frosting.
- Garnish with extra berries and edible flowers if desired.
