Ingredients

  • 2 ½ teaspoons Baking powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1 ¾ cups Granulated sugar
  • 4 large Eggs
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh mixed berries
  • Optional: Almond extract, Zest of lemon or orange, Chopped nuts, Edible flowers

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Gradually combine the dry ingredients with the butter mixture, alternating with buttermilk.
  6. Gently fold in the fresh mixed berries.
  7. Divide the batter between the prepared pans and bake for 25-30 minutes.
  8. While the cakes cool, whip together the heavy cream, powdered sugar, and vanilla extract for the frosting.
  9. Assemble the cake by layering the cakes with frosting in between and covering the top and sides with the remaining frosting.
  10. Garnish with extra berries and edible flowers if desired.
