Ingredients

- 4 cups dandelion flowers (just the yellow petals)
- 2 ½ cups sugar
- 4 cups water
- 2 tablespoons lemon juice (fresh is best!)
Instructions
- Pick the bright yellow petals from the dandelions, leaving most of the green parts behind.
- Rinse the petals gently to remove any dirt or critters.
- In a pot, combine the rinsed petals and water, bring to a simmer, then cover and refrigerate for 24 hours.
- Strain the liquid through a fine mesh sieve or cheesecloth, pressing to extract all the juice.
- Add sugar and lemon juice to the strained liquid, stirring until the sugar dissolves.
- Return the mixture to heat and simmer until it thickens to a syrupy consistency.
- Let it cool slightly, then pour into a jar for storage.
