Description
This crockpot chicken and gravy is rich, tender, and comforting. It is an easy slow-cooked dinner made with simple pantry ingredients and a creamy sauce.
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 1/4 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 tablespoon butter
- 1 cup plain Greek yogurt
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water
- 1/2 cup diced onion (optional)
- 1 cup sliced mushrooms (optional)
- 1 tablespoon chopped parsley for garnish
Instructions
- Lightly grease the inside of your slow cooker. Place chicken breasts in a single layer.
- In a bowl, whisk together chicken broth, garlic powder, onion powder, thyme, paprika, salt, pepper, flour, and melted butter until smooth. Pour this mixture over the chicken.
- Cover the slow cooker. Cook on low for 6 hours or high for 3 hours, until the chicken reaches 165°F and is fork-tender.
- Remove the chicken. Stir in the cornstarch slurry into the liquid remaining in the slow cooker. Cover and cook on high for 10 minutes until the sauce thickens slightly.
- Shred the chicken. Stir the shredded chicken back into the gravy. Mix in the Greek yogurt until the mixture is creamy and well combined.
- Serve the chicken and gravy over mashed potatoes, steamed rice, or warm biscuits. Garnish with parsley if you used it.
Notes
- For better flavor, sear the chicken in a skillet for 2–3 minutes per side before slow cooking to create a light golden crust.
