Description

This crockpot chicken and gravy is rich, tender, and comforting. It is an easy slow-cooked dinner made with simple pantry ingredients and a creamy sauce.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 1/4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 cup plain Greek yogurt
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • 1/2 cup diced onion (optional)
  • 1 cup sliced mushrooms (optional)
  • 1 tablespoon chopped parsley for garnish


Instructions

  1. Lightly grease the inside of your slow cooker. Place chicken breasts in a single layer.
  2. In a bowl, whisk together chicken broth, garlic powder, onion powder, thyme, paprika, salt, pepper, flour, and melted butter until smooth. Pour this mixture over the chicken.
  3. Cover the slow cooker. Cook on low for 6 hours or high for 3 hours, until the chicken reaches 165°F and is fork-tender.
  4. Remove the chicken. Stir in the cornstarch slurry into the liquid remaining in the slow cooker. Cover and cook on high for 10 minutes until the sauce thickens slightly.
  5. Shred the chicken. Stir the shredded chicken back into the gravy. Mix in the Greek yogurt until the mixture is creamy and well combined.
  6. Serve the chicken and gravy over mashed potatoes, steamed rice, or warm biscuits. Garnish with parsley if you used it.

Notes

  • For better flavor, sear the chicken in a skillet for 2–3 minutes per side before slow cooking to create a light golden crust.
