Ingredients

  • Pie Crust: 1 pre baked 9 inch pie crust
  • Coconut Custard Filling: 2¼ cups whole milk divided
  • Coconut Custard Filling: ½ cup granulated sugar

  • Coconut Custard Filling: 2 tablespoons cornstarch
  • Coconut Custard Filling: 3 tablespoons all purpose flour

Instructions

  1. Warm 1¾ cups of the milk in a medium saucepan over medium heat until just steaming but not boiling.
  2. In a bowl, whisk the sugar, salt, cornstarch, and flour. Whisk in the remaining ½ cup milk until smooth.
  3. Slowly pour the milk mixture into the warm milk, whisking constantly. Cook until thickened and gently bubbling. Reduce heat and cook 5 minutes, stirring often.
  4. In a small bowl, whisk the egg yolks. Slowly whisk in ¼ cup of the hot custard, then return the egg mixture to the saucepan, whisking constantly.
  5. Cook 2 minutes until thick and smooth, then remove from heat.
  6. Stir in the butter, coconut flavoring, and shredded coconut until fully combined.
  7. Pour the custard into the prepared pie crust and smooth the top. Cool 10 minutes, then cover and refrigerate at least 3 hours until set.
  8. Beat the heavy cream, powdered sugar, and coconut flavoring until stiff peaks form.
  9. Spread the whipped cream over the chilled pie and sprinkle with toasted coconut.
