Ingredients

  • 1 cup warm water (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup olive oil, plus more for drizzling
  • ½ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • ½ teaspoon vanilla extract
  • 2 cups powdered sugar
  • ¼ cup milk


Instructions

  1. In a large bowl, combine warm water, yeast, and granulated sugar. Let sit for 5 minutes until foamy.
  2. Stir in flour and salt until a shaggy dough forms.
  3. Add ¼ cup olive oil and mix until incorporated.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning once to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. While the dough rises, prepare the filling: In a medium bowl, combine softened butter, brown sugar, cinnamon, and vanilla extract. Mix until well combined.
  7. Once the dough has risen, gently punch it down. Transfer the dough to a lightly oiled 9×13 inch baking pan. Gently press the dough to fill the pan.
  8. Spread the cinnamon filling evenly over the dough.
  9. Using a knife or offset spatula, create swirls in the dough, incorporating the filling.
  10. Cover the pan with plastic wrap and let rise again for 30 minutes.
  11. Preheat oven to 375°F (190°C).

  13. While the focaccia bakes, prepare the glaze: In a small bowl, whisk together powdered sugar and milk until smooth.
