Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and lemon zest.
- Gradually add the dry mixture to the wet ingredients, alternating with buttermilk, starting and ending with dry ingredients. Mix until just combined.
- Gently fold in the blueberries and nuts, if using.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, checking for doneness with a toothpick.
- While the loaf is baking, prepare the lemon glaze by whisking together powdered sugar and lemon juice until smooth.
- Once baked, let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle the lemon glaze over the top before serving.
