Description
Beef Chow, also known as Beef Chow Fun, is a popular Cantonese stir-fry dish featuring tender beef, silky rice noodles, and crisp vegetables, all coated in a savory sauce.

- 12 oz (340g) wide rice noodles
- 8 oz (225g) flank steak, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1/2 tsp ginger, grated
- 1/2 cup bean sprouts
- 2 green onions, sliced
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Marinate the beef by mixing it with 1 tbsp soy sauce, cornstarch, and baking soda. Let it sit for 15 minutes.
- Prepare the rice noodles by soaking or loosening them as needed.
- Heat 1 tbsp vegetable oil in a wok over high heat. Stir-fry the beef until just cooked, then remove and set aside.
- Add another tbsp of oil, then stir-fry garlic and ginger until fragrant.
- Add the noodles, soy sauce, dark soy sauce, oyster sauce, sugar, and stir well.
- Return the beef to the wok and toss to combine.
- Add bean sprouts and green onions, then stir-fry for another minute.
- Drizzle with sesame oil and serve hot.
Notes
- For a smoky flavor (wok hei), cook over high heat and avoid overcrowding the pan.
- Use fresh rice noodles if possible for better texture.
- For a gluten-free version, replace soy sauce with tamari.
- Marinating beef with baking soda helps tenderize it.
