- 1 lb beef chuck roast, cut into chunks
- 2 cups beef broth
- 3 dried guajillo peppers, stemmed and seeded
- 2 dried ancho peppers, stemmed and seeded
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper to taste
- 8 corn tortillas
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Avocado slices (optional, for garnish)
Instructions
- Prepare the beef filling by combining beef chuck roast, beef broth, guajillo peppers, ancho peppers, onion, garlic, cumin, oregano, paprika, salt, and pepper in a pot. Bring to a boil, then simmer for 2 hours.
- Shred the beef using two forks and return it to the pot.
- Preheat the air fryer to 375°F (190°C).
- Assemble the tacos by dipping tortillas in broth, adding shredded beef and cheese, and folding them.
- Air fry the tacos for 8-10 minutes, flipping halfway through.
- Serve the tacos garnished with cilantro and lime wedges.
