Ingredients

  • 1 lb beef chuck roast, cut into chunks
  • 2 cups beef broth
  • 3 dried guajillo peppers, stemmed and seeded
  • 2 dried ancho peppers, stemmed and seeded
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Avocado slices (optional, for garnish)

Instructions

  1. Prepare the beef filling by combining beef chuck roast, beef broth, guajillo peppers, ancho peppers, onion, garlic, cumin, oregano, paprika, salt, and pepper in a pot. Bring to a boil, then simmer for 2 hours.
  2. Shred the beef using two forks and return it to the pot.
  3. Preheat the air fryer to 375°F (190°C).
  4. Assemble the tacos by dipping tortillas in broth, adding shredded beef and cheese, and folding them.
  5. Air fry the tacos for 8-10 minutes, flipping halfway through.
  6. Serve the tacos garnished with cilantro and lime wedges.
