Ingredients

  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions.
  2. Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque.
  4. Add cherry tomatoes and baby spinach, cooking until spinach wilts and tomatoes soften.
  5. Pour in heavy cream, stir in Parmesan cheese and Italian seasoning, and let simmer to thicken.
  6. Add the cooked fettuccine to the skillet and toss to coat in the sauce.
  7. Serve hot, garnished with fresh basil leaves.
